Mandarin Orange Salad


I have a confession to make. One that's going to perhaps change the impression that I'm a decent cook. One that's going to make some cringe. One that may force you to lose all respect for me and delete my blog.

Sometimes ....

When I'm making dinner ...

And I really need to provide something on the side ...

I use ...

a bagged salad kit.


Let's all take a minute to gasp and judge me. I know, I horrify myself sometimes.

It's not as good as a fresh tossed salad, but it gets some form of a vegetable on my table (which is really a TV tray most nights if we're being so honest). I come from the belief that a side salad should never require more work than the main dish it's accompanying. Seems a good rule to follow.

But, man, some salad recipes can get very complicated, and I don't really care to devote that much energy to lettuce, spinach or any other leafy green for that matter!

So, I was thrilled last week when a friend of mine shared a mandarin orange salad recipe in conversation that was easy enough to remember and easy enough to prepare in the time you can shake up a salad kit.

It's so delicious and fresh, making it the perfect side for a spring supper.

Mandarin Orange Salad

Lettuce of Your Choice (I prefer Romaine)
1 small can of Mandarin Oranges, drained
Chow Mein Noodles (use as much or as little as you like)
Italian Dressing
Caesar Dressing
  • Combine lettuce, mandarin oranges and chow mein noodles.
  • Mix equal parts Italian dressing and Caesar dressing together and stir well to combine.
  • Pour dressing over salad, toss and enjoy!
